Apple nachos
Apple nachos are a fun after-school snack that kids can help put together. Crisp apple slices with a drizzle of nut butter pair fiber with protein and healthy fat, which makes a snack more satisfying.
Ingredients:
- 2 apples, cored and thinly sliced
- Squeeze of lemon juice
- 2 tablespoons natural peanut or almond butter
- 1 tablespoon mini dark chocolate chips or cacao nibs
- 1 tablespoon unsweetened coconut flakes
- 1 tablespoon chopped nuts or pumpkin seeds
- Sprinkle of cinnamon
Preparation:
- Toss the apple slices with lemon juice so they don't brown, then fan them out on a plate.
- Warm the nut butter for 10 to 15 seconds so it's easy to drizzle, and drizzle it over the apples.
- Scatter the chocolate, coconut, nuts and cinnamon on top and serve right away.
- For a nut-free version, use sunflower seed butter and pumpkin seeds.
