Avocado
Avocados are one of my favorite everyday foods. Most of their fat is monounsaturated, the same heart-friendly kind found in olive oil, and they're a good source of fiber, potassium and folate. That mix of fat and fiber helps meals feel satisfying and may help keep blood sugar steadier. Healthy fat also helps your body absorb fat-soluble nutrients, like the carotenoids in carrots and leafy greens.
Easy ways to enjoy them:
- Add a few slices to your salad to get more from the veggies
- Mash with lime juice and sea salt for a quick dip
- Blend half into a smoothie for creaminess
Tip: to ripen one faster, tuck it in a paper bag with a banana. Once it's ripe, move it to the fridge to buy yourself a few more days.
