Baked apples

Prep time: 10 minutes. Baked apples make a cozy fall dessert or weekend breakfast, and they taste like apple pie without the crust. Cinnamon adds warmth and natural sweetness, so you need very little sweetener.

Ingredients:

  • 4 firm apples (Honeycrisp, Gala or Granny Smith)
  • 1/4 cup rolled oats
  • 1/4 cup chopped walnuts or pecans
  • 2 tablespoons raisins (optional)
  • 1 tablespoon maple syrup
  • 1 tablespoon butter or coconut oil, melted
  • 1 teaspoon cinnamon
  • 1/2 cup water

Preparation:

  • Preheat the oven to 375°F.
  • Core each apple, leaving about 1/2 inch at the bottom so the filling stays put.
  • Mix the oats, nuts, raisins, maple syrup, butter and cinnamon, then pack the filling into the apples.
  • Set the apples in a baking dish and pour the water around them.
  • Bake 35–45 minutes, until a knife slides easily into the apple. Serve warm, plain or with a spoonful of Greek yogurt.
