Baked oatmeal cups

Baked oatmeal cups are like lightly sweet, portable muffins made mostly from oats, fruit and eggs. Bake a batch on the weekend for easy breakfasts and lunchbox snacks.

Ingredients:

  • 2 1/2 cups rolled oats
  • 2 ripe bananas, mashed
  • 2 eggs
  • 1 1/4 cups milk of choice
  • 1/4 cup maple syrup or honey
  • 1 teaspoon each baking powder, cinnamon and vanilla extract
  • 1/4 teaspoon sea salt
  • 1 cup blueberries, fresh or frozen
  • 1/3 cup chopped walnuts or pecans (optional)

Preparation:

  • Heat the oven to 350°F and grease or line a 12-cup muffin tin.
  • Whisk the bananas, eggs, milk, maple syrup and vanilla in a large bowl.
  • Stir in the oats, baking powder, cinnamon and salt, then fold in the berries and nuts.
  • Divide among the cups and bake 22 to 25 minutes, until set and golden on top.
  • Cool 10 minutes before removing. Refrigerate up to 5 days or freeze up to 3 months.
