Baked salmon with herbs

This is the salmon I teach clients who tell me they "don't know how to cook fish." Salmon is one of the best food sources of omega-3 fats, which are linked with heart and brain health, and this recipe is on the table in about 20 minutes.

Ingredients:

  • 4 salmon fillets (about 5 ounces each), wild if available
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh parsley
  • 1 lemon, zested, then sliced
  • 1/2 teaspoon sea salt and 1/4 teaspoon pepper

Preparation:

  • Heat the oven to 400°F and line a baking sheet with parchment.
  • Stir together the oil, garlic, herbs, lemon zest, salt and pepper.
  • Place the salmon skin-side down on the pan, spoon the herb mixture over the top and tuck the lemon slices around the fillets.
  • Bake 12 to 15 minutes, until the salmon flakes easily with a fork (145°F in the thickest part).
  • Serve with a green salad or roasted vegetables. Leftovers are delicious flaked over greens the next day.
