Batch-cook grains for the week
A container of cooked grains in the fridge makes healthy meals easy on busy nights. I ask my clients to pick one or two on the weekend and cook a big batch:
- Rinse the grain in a fine-mesh strainer (this removes quinoa's bitter coating).
- Simmer, covered, with a pinch of salt: quinoa 1 part grain to 2 parts water for 15 minutes, millet 1 to 2 1/2 for 20 minutes, brown rice 1 to 2 for 45 minutes.
- Rest it, covered, 10 minutes, then fluff with a fork.
- Cool quickly on a sheet pan, then refrigerate up to 4 days or freeze in 1-cup portions.
Use them in grain bowls, soups and stir-fries, or warm a scoop with milk and cinnamon for breakfast.
