Black bean brownies

I love bringing these to gatherings and watching people find out what's in them. Black beans stand in for the flour, adding fiber and plant protein, and the brownies come out fudgy and rich.

Ingredients:

  • 1 can (15 ounces) black beans, rinsed and drained well
  • 2 eggs
  • 1/2 cup maple syrup
  • 1/3 cup unsweetened cocoa powder
  • 3 tablespoons melted coconut oil
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • Pinch of sea salt
  • 1/3 cup dark chocolate chips

Preparation:

  • Preheat the oven to 350°F and grease an 8-inch square pan.
  • Blend everything except the chocolate chips in a food processor until completely smooth, about 1 minute.
  • Stir in half the chocolate chips, spread the batter in the pan and sprinkle the rest on top.
  • Bake 25–30 minutes, until the center is set and the edges pull away from the pan.
  • Let them cool completely before cutting; they firm up as they cool.
