Buckwheat
Despite its name, buckwheat isn't wheat at all. It's the seed of a plant related to rhubarb, and it's naturally gluten-free, though it's wise to check labels for cross-contact if you avoid gluten strictly.
Buckwheat has a nutty, earthy flavor and offers fiber, magnesium and plant protein, along with rutin, an antioxidant compound. You'll find it as:
- Groats, which cook like rice in about 15 minutes
- Kasha, pre-toasted groats with a deeper flavor
- Buckwheat flour, lovely in pancakes
- Soba noodles (look for 100% buckwheat)
Try this: simmer 1 cup of rinsed groats in 2 cups of water for a breakfast porridge, then top with cinnamon, berries and a drizzle of honey.
