Buddha bowl
A Buddha bowl is a generous mix of grains, vegetables, protein and a tasty sauce, and it's my favorite way to use up meal-prep leftovers. Here's my go-to version for two bowls.
Ingredients:
- 2 cups baby spinach or massaged kale
- 1 cup cooked quinoa or brown rice
- 1 medium sweet potato, cubed and roasted
- 1 cup chickpeas, roasted or straight from the can
- 1 cup shredded red cabbage or carrots
- 1 avocado, sliced
- 1 tablespoon sesame or pumpkin seeds
- Tahini sauce: 2 tablespoons tahini, 1 tablespoon lemon juice, 1 to 2 tablespoons water and a pinch of salt
Preparation:
- Whisk the tahini sauce ingredients until smooth and pourable.
- Divide the greens between two bowls.
- Arrange the grain, sweet potato, chickpeas, cabbage and avocado in sections on top.
- Drizzle with the sauce and sprinkle with seeds.
- Swap freely: any grain, any roasted vegetable, any protein (eggs, salmon or tofu) and any sauce you love.
