Celery
Celery is mostly water, which makes it a crisp, hydrating snack. It also offers fiber, potassium and apigenin, a plant compound being studied for its antioxidant properties.
You may have seen celery juice described as a cure-all. The research doesn't support the big claims, and juicing removes most of the fiber, so enjoying the whole stalk is a simple, affordable way to get its benefits.
Ideas:
- Fill stalks with almond butter or hummus
- Add the leafy tops to soups, stocks and salads; they're full of flavor
- Start soups with a classic base of celery, onion and carrot
Try this: when you get home from the store, wash and cut a bunch of celery and stand it in a jar of water in the fridge so it stays crisp and ready.
