Cilantro quinoa

Prep time: 20 minutes. This bright, lime-y side goes with fish, chicken, beans or a big salad, and it keeps well for lunches. Quinoa is technically a seed, and it's one of the few plant foods that contains all nine essential amino acids.

Ingredients:

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1/2 teaspoon sea salt
  • 1/2 cup chopped fresh cilantro
  • 2 green onions, thinly sliced
  • 2 tablespoons fresh lime juice
  • 1 tablespoon extra-virgin olive oil
  • 1 small garlic clove, minced

Preparation:

  • Rinse the quinoa well in a fine-mesh strainer to remove its natural bitter coating.
  • Bring the quinoa, water and salt to a boil, then cover, lower the heat and simmer 15 minutes.
  • Turn off the heat and let it sit, covered, for 5 minutes, then fluff with a fork.
  • Stir in the cilantro, green onions, lime juice, olive oil and garlic. Serve warm or chilled.
