Cinnamon beets

Roasting brings out the natural sweetness in beets, and a little cinnamon makes them taste almost like dessert. Beets get their deep color from betalains, plant pigments with antioxidant properties.

Ingredients:

  • 4 medium beets, peeled and cut into 1-inch cubes
  • 1 tablespoon melted coconut oil or olive oil
  • 1 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 1 tablespoon maple syrup or raw honey (optional)
  • Squeeze of fresh orange juice

Preparation:

  • Preheat the oven to 400°F and line a baking sheet with parchment. (Wear gloves while peeling if you'd rather not have pink hands.)
  • Toss the beets with the oil, cinnamon and salt, and spread them in a single layer.
  • Roast 35–40 minutes, stirring halfway, until tender and caramelized at the edges.
  • Drizzle with the maple syrup and orange juice while warm, and toss.
