Dark chocolate bark
I always keep a batch of this bark in the fridge for when a chocolate craving hits, because a square or two feels like a real treat. Dark chocolate with 70% cacao or more contains flavanols, plant compounds linked with heart health, and the nuts and fruit add crunch and fiber.
Ingredients:
- 8 ounces dark chocolate (70% cacao or higher), chopped
- 1/3 cup toasted almonds or pistachios, chopped
- 1/4 cup dried cherries or cranberries
- 2 tablespoons pumpkin seeds
- 1 tablespoon unsweetened coconut flakes (optional)
- Pinch of flaky sea salt
Preparation:
- Line a baking sheet with parchment.
- Melt the chocolate in a heatproof bowl set over a pot of barely simmering water (or microwave in 20-second bursts), stirring until smooth.
- Spread it about 1/4 inch thick on the parchment.
- Scatter the toppings over the chocolate and finish with a pinch of salt.
- Refrigerate 30 minutes until firm, then break into pieces. Store in the fridge up to 2 weeks.
