Energy bites
Energy bites are my answer to the 3 p.m. slump: a no-bake snack with fiber, protein and healthy fats that you can roll in 15 minutes. Keep a batch in the fridge for busy days.
Ingredients:
- 1 cup rolled oats
- 1/2 cup natural peanut or almond butter
- 1/4 cup honey or maple syrup
- 2 tablespoons ground flaxseed
- 1 tablespoon chia seeds
- 1/3 cup dark chocolate chips or chopped dates
- 1 teaspoon vanilla extract
- Pinch of sea salt
Preparation:
- Stir everything together in a bowl until well combined.
- Chill 20 to 30 minutes so the mixture is easier to roll.
- Roll into 1-inch balls (about 16). If the mix is too dry, add a spoonful of nut butter; if it's too sticky, add a few more oats.
- Store in the fridge up to 1 week or in the freezer up to 3 months.
