Flatbreads

Prep time: 20 minutes. These soft flatbreads need no yeast and no rising time. Greek yogurt adds protein and a little tang, and whole wheat flour brings fiber. Use them for wraps, mini pizzas or alongside soup.

Ingredients:

  • 1 1/4 cups whole wheat flour, plus more for rolling
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 1 cup plain Greek yogurt
  • 1 tablespoon extra-virgin olive oil, plus more for brushing
  • Optional: 1 teaspoon dried oregano or garlic powder

Preparation:

  • Whisk the flour, baking powder and salt, then stir in the yogurt and oil until a shaggy dough forms.
  • Knead on a floured surface for 1–2 minutes, adding flour a tablespoon at a time if it's sticky.
  • Divide into 4 balls and roll each about 1/8 inch thick.
  • Cook in a hot, dry skillet over medium-high heat for 1–2 minutes per side, until puffed with golden spots.
  • Brush with olive oil and sprinkle with herbs while warm.
