Fresh salsa

Fresh salsa, also called pico de gallo, is bright, crunchy and practically a vegetable side dish on its own. It's best in late summer, when local tomatoes are at their peak.

Ingredients:

  • 4 ripe Roma tomatoes, seeded and diced
  • 1/2 small white onion, finely diced
  • 1 jalapeño, seeded and minced (leave some seeds in for more heat)
  • 1/3 cup chopped fresh cilantro
  • 1 small garlic clove, minced (optional)
  • Juice of 1 lime
  • 1/2 teaspoon sea salt

Preparation:

  • Combine the tomatoes, onion, jalapeño, cilantro and garlic in a bowl.
  • Add the lime juice and salt and stir gently.
  • Let it sit 15 minutes so the flavors come together, then taste and adjust.
  • Serve with tacos, eggs, grilled fish or crunchy cucumber slices. It's best within 2 days.
