Frozen yogurt bark

Frozen yogurt bark is a cool, colorful treat for warm afternoons, and kids love breaking it into pieces. Starting with plain yogurt and fresh fruit means you decide how sweet it is.

Ingredients:

  • 2 cups plain Greek yogurt
  • 1 to 2 tablespoons maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1 cup mixed berries, such as sliced strawberries, blueberries and raspberries
  • 2 tablespoons chopped pistachios or almonds
  • 1 tablespoon mini dark chocolate chips or unsweetened coconut (optional)

Preparation:

  • Line a baking sheet with parchment.
  • Stir together the yogurt, maple syrup and vanilla, and spread it about 1/2 inch thick on the parchment.
  • Scatter the fruit, nuts and chocolate on top, pressing them in lightly.
  • Freeze at least 3 hours, until solid, then break into pieces.
  • Store in a freezer bag up to 1 month. Let pieces sit a minute or two before eating.
