Gomasio
Gomasio is a simple Japanese condiment of toasted sesame seeds ground with a little sea salt. Because the seeds stretch the salt so far, a sprinkle gives you big, savory flavor with less sodium than reaching for the salt shaker. Sesame seeds also bring minerals like copper, magnesium and calcium, plus a nutty crunch.
I keep a jar next to the stove. To make it:
- Toast 1/2 cup sesame seeds in a dry skillet over medium heat for 3–4 minutes, stirring, until golden
- Let them cool, then add 1 teaspoon sea salt
- Grind lightly with a mortar and pestle, or pulse a few times in a spice grinder, leaving some seeds whole
- Store in a jar in the fridge for up to 3 weeks
Try this: sprinkle it on rice, steamed greens, eggs or avocado toast.
