Green goddess dressing

This creamy, herb-packed dressing is a delicious way to get more greens into your day, and it doubles as a dip for raw vegetables. Avocado and yogurt give it a rich texture without mayonnaise.

Ingredients:

  • 1 ripe avocado
  • 1/2 cup plain Greek yogurt (or 1/4 cup tahini for dairy-free)
  • 1 cup packed fresh herbs, such as parsley, basil and chives
  • 2 green onions, chopped
  • 1 garlic clove
  • 3 tablespoons lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon sea salt
  • 1/4 to 1/2 cup water

Preparation:

  • Blend everything except the water in a blender or food processor until smooth.
  • Add water a little at a time until it's as thick or thin as you like.
  • Taste and adjust the salt and lemon.
  • Refrigerate in a sealed jar up to 3 days. The top may darken slightly; just give it a stir.
