Healthy sweet treats: banana ice cream
Prep time: 5 minutes, plus freezing. This one-ingredient "ice cream" is creamy, naturally sweet and dairy-free, and kids love helping make it. The riper the bananas, the sweeter it gets!
Ingredients:
- 2 ripe bananas, peeled, sliced and frozen for at least 2 hours
- 1–2 tablespoons milk of choice (only if needed)
- Optional: 1 tablespoon cacao powder or peanut butter
- Optional: 1/2 teaspoon vanilla or a pinch of cinnamon
Preparation:
- Let the frozen banana slices sit for 5 minutes to soften slightly.
- Blend in a food processor, scraping down the sides. It will look crumbly at first, then turn smooth and creamy in 2–4 minutes.
- Add a splash of milk only if it's struggling to blend.
- Pulse in any mix-ins. Enjoy as soft serve, or freeze for 1 hour for a scoopable texture.
