Homemade almond milk

Homemade almond milk tastes fresh and creamy, with no added sugar or thickeners. Unlike many store brands it isn't fortified with calcium, so enjoy it alongside other calcium-rich foods like leafy greens, beans and sesame seeds.

Ingredients:

  • 1 cup raw almonds
  • 4 cups filtered water, plus more for soaking
  • 1 to 2 pitted dates or 1 teaspoon maple syrup (optional)
  • 1/2 teaspoon vanilla extract (optional)
  • Pinch of sea salt

Preparation:

  • Cover the almonds with water and soak 8 to 12 hours in the fridge, then drain and rinse.
  • Blend the almonds with the 4 cups of fresh water, dates, vanilla and salt on high for 1 to 2 minutes.
  • Pour through a nut-milk bag or a cheesecloth-lined strainer, squeezing out all the liquid.
  • Refrigerate in a sealed jar up to 4 days. Shake before using, since it naturally separates.
  • Save the pulp and stir it into oatmeal, smoothies or energy bites.
