Homemade granola
Many store-bought granolas pack a surprising amount of added sugar. Making your own takes about 30 minutes and lets you control the sweetness, and your kitchen will smell amazing.
Ingredients:
- 3 cups rolled oats
- 1 cup raw almonds, pecans or walnuts, roughly chopped
- 1/2 cup pumpkin or sunflower seeds
- 1/2 cup unsweetened coconut flakes
- 1 teaspoon cinnamon and 1/2 teaspoon sea salt
- 1/3 cup maple syrup or honey
- 1/3 cup melted coconut oil or olive oil
- 1 teaspoon vanilla extract
- 1/2 cup dried fruit (optional)
Preparation:
- Heat the oven to 325°F and line a large baking sheet with parchment.
- Stir the oats, nuts, seeds, coconut, cinnamon and salt together in a big bowl.
- Whisk the maple syrup, oil and vanilla, pour over the dry mix and stir until everything is coated.
- Spread evenly on the pan and bake 25 to 30 minutes, stirring once halfway, until golden.
- Let it cool completely on the pan without stirring (that's how you get clusters), then mix in the dried fruit. Store airtight up to 2 weeks.
