Homemade nut butter

Homemade nut butter needs just one essential ingredient and a food processor. It's simply nuts, with no added oils or sugar unless you choose them, and you can mix and match flavors.

Ingredients:

  • 2 cups unsalted almonds, peanuts or cashews (or a mix)
  • 1/4 teaspoon sea salt, or to taste
  • 1/2 teaspoon cinnamon (optional)
  • 1 to 2 teaspoons maple syrup or honey (optional)

Preparation:

  • If your nuts are raw, roast them on a baking sheet at 350°F for 8 to 10 minutes, until fragrant. Let cool for a few minutes; warm nuts blend faster.
  • Process the nuts in a food processor for 8 to 12 minutes, stopping every minute or two to scrape down the sides. They'll go from crumbs to a thick paste to a smooth, creamy butter, so be patient.
  • Blend in the salt and any cinnamon or sweetener.
  • Store in a jar in the fridge for up to 1 month.
