Kale chips
Prep time: 30 minutes. Crunchy, salty and gone in minutes, kale chips are a fun way to bring dark leafy greens to snack time. Kids often like them more than you'd expect!
Ingredients:
- 1 bunch curly kale (about 8 cups torn), thick stems removed
- 1 tablespoon extra-virgin olive oil or avocado oil
- 1/4 teaspoon sea salt
- Optional: 1 tablespoon nutritional yeast for a cheesy flavor
- Optional: pinch of garlic powder or smoked paprika
Preparation:
- Preheat the oven to 300°F and line two baking sheets with parchment.
- Wash the kale and dry it completely; any water left on the leaves makes them soggy.
- Tear into bite-size pieces and massage in the oil until every leaf is lightly coated.
- Spread in a single layer and season lightly (kale shrinks a lot as it bakes).
- Bake 20–25 minutes, rotating the pans halfway, until crisp but not browned. They crisp up more as they cool.
