Lentils

Lentils are one of the most budget-friendly, nourishing foods in the pantry. A cooked cup offers about 18 grams of protein and 15 grams of fiber, plus folate, iron and potassium. That protein-and-fiber combination is linked with steadier blood sugar and lasting fullness.

Unlike dried beans, lentils need no soaking and cook in 15 to 30 minutes:

  • Red lentils melt into soups and dals
  • Green and brown lentils hold their shape for salads and tacos
  • French green and black lentils stay firm and slightly peppery

Try this: simmer 1 cup of rinsed lentils in 3 cups of water or broth with a bay leaf until tender. Keep them in the fridge for quick bowls and salads all week.
