Millet

Millet is a small, round, gluten-free whole grain that has been a staple across Africa and Asia for thousands of years. It cooks up fluffy like couscous or creamy like porridge, depending on how much water you use. Millet is a good source of magnesium, phosphorus and B vitamins, plus fiber to keep you full.

To make it:

  • Rinse 1 cup millet, then toast it in a dry pot for 3–4 minutes until it smells nutty
  • Add 2 cups water or broth and a pinch of salt
  • Bring to a boil, then cover and simmer for 15–20 minutes
  • Let it rest 10 minutes, then fluff with a fork

For porridge, use 3 cups of liquid and stir often.
