Oatmeal with blueberries and bananas

Prep time: 10 minutes. A warm bowl of oatmeal is a classic for good reason. Oats contain beta-glucan, a soluble fiber linked with healthy cholesterol levels, and blueberries add antioxidants and natural sweetness.

Ingredients:

  • 1/2 cup rolled oats
  • 1 cup water or milk of choice
  • Pinch of sea salt
  • 1 ripe banana
  • 1/2 cup blueberries, fresh or frozen
  • 1 tablespoon chopped walnuts or ground flaxseed
  • 1/2 teaspoon cinnamon

Preparation:

  • Bring the water or milk and salt to a boil, then stir in the oats and lower the heat.
  • Simmer 5 minutes, stirring now and then.
  • In the last minute, stir in half the banana, mashed, for natural sweetness (and frozen blueberries, if using, so they warm through).
  • Top with the remaining banana slices, the blueberries, walnuts and a sprinkle of cinnamon.
