Pomegranates

Pomegranates are in season from fall into early winter, and their jewel-like seeds, called arils, are worth the little bit of effort. They're a source of fiber, vitamin C and vitamin K, and they contain punicalagins, antioxidant compounds researchers are studying for heart health.

The no-mess way to open one:

  • Score the skin into quarters and break it open over a bowl of water
  • Gently push the arils loose under the water
  • The seeds sink and the white pith floats, so skim it off
  • Drain and store the arils in the fridge for up to 5 days

Sprinkle them on salads, yogurt, oatmeal or roasted squash, or eat them by the spoonful.
