Quinoa porridge

Prep time: 20 minutes. Quinoa porridge is a cozy, protein-rich change from oatmeal, and it's naturally gluten-free. Cook a batch on Sunday and reheat a portion with a splash of milk each morning.

Ingredients:

  • 1/2 cup quinoa, rinsed well
  • 1 cup water
  • Pinch of sea salt
  • 1/2 cup coconut or almond milk, plus more for serving
  • 1/2 teaspoon cinnamon
  • 1–2 teaspoons maple syrup or raw honey
  • Toppings: berries, chopped nuts or ground flaxseed

Preparation:

  • Bring the quinoa, water and salt to a boil, then cover and simmer 12–15 minutes, until the water is absorbed.
  • Stir in the milk and cinnamon and cook uncovered 3–5 minutes more, stirring, until creamy.
  • Sweeten to taste and spoon into bowls.
  • Add your toppings and a splash of milk.
