Rawsome cheese dip
This creamy dip is made from cashews, with no dairy at all, and nutritional yeast (a savory flaked yeast found in most grocery stores) gives it that cheesy flavor. Serve it with raw veggies or crackers, or spoon it over a baked sweet potato.
Ingredients:
- 1 cup raw cashews
- 1/4 cup water, plus more as needed
- 2 tablespoons nutritional yeast
- 1 tablespoon fresh lemon juice
- 1/4 red bell pepper
- 1 small garlic clove
- 1/2 teaspoon sea salt
- Pinch of turmeric, for a golden color
Preparation:
- Soak the cashews in water for 2–4 hours, then drain and rinse.
- Add everything to a blender and blend 1–2 minutes, scraping down the sides, until silky.
- Add more water a tablespoon at a time for a thinner dip.
- Store in a glass jar in the fridge for up to 5 days.
