Simple roasted sweet potatoes
Prep time: 35 minutes. Keep a container of these in the fridge and you're halfway to a great meal: toss them into salads, grain bowls or scrambled eggs. Sweet potatoes are a good source of fiber and beta-carotene, which your body turns into vitamin A.
Ingredients:
- 2 large sweet potatoes, scrubbed and cut into 1-inch cubes (no need to peel)
- 1 1/2 tablespoons melted coconut oil or olive oil
- 1/2 teaspoon sea salt
- 1/2 teaspoon cinnamon or smoked paprika
Preparation:
- Preheat the oven to 425°F and line a baking sheet with parchment.
- Toss the sweet potatoes with the oil, salt and your choice of seasoning.
- Spread in a single layer and roast 25–30 minutes, flipping halfway, until tender and caramelized at the edges.
- Cool, then store in a glass container in the fridge for up to 5 days.
