Sneaking in nutrition: flax

Flaxseed is one of the easiest nutrition boosts to sneak into family meals. It's a source of fiber and plant-based omega-3 fats, and its mild, nutty taste disappears into most foods. Use ground flax, since whole seeds tend to pass through undigested.

  • Stir 1 tablespoon into oatmeal, yogurt or applesauce.
  • Blend it into smoothies.
  • Mix a few tablespoons into pancake, muffin or banana bread batter.
  • Add it to meatballs or veggie burgers in place of some breadcrumbs.
  • Stir a little into peanut butter before spreading.

Store ground flax in the fridge or freezer, since its delicate oils can go rancid. Start kids with about 1 teaspoon a day and offer plenty of water. Try this: add a spoonful to tomorrow's breakfast.
