Sweet greens
If bitter greens aren't your thing yet, start here. A little apple, onion and toasted pecans soften kale's bite and make this side naturally sweet, so it's a great way to win over kids and greens skeptics.
Ingredients:
- 1 bunch kale or Swiss chard, thick stems removed, chopped
- 1 tablespoon coconut oil or olive oil
- 1/4 cup chopped red onion
- 1 small apple, thinly sliced
- 2 tablespoons water
- 1 tablespoon apple cider vinegar or orange juice
- 1 teaspoon maple syrup (optional)
- 2 tablespoons chopped toasted pecans or walnuts
- Pinch of sea salt and cinnamon
Preparation:
- Warm the oil in a large skillet over medium heat and cook the onion and apple 4–5 minutes, until soft.
- Add the greens and water, cover and cook 3–4 minutes, until wilted.
- Uncover and stir in the vinegar, maple syrup, salt and cinnamon.
- Top with the toasted nuts and serve warm.
