Try one new vegetable a week

It's easy to buy the same five vegetables every week. But each plant brings its own mix of fiber, vitamins and polyphenols (the colorful plant compounds linked with many of produce's benefits), and research suggests a varied diet is linked with a more diverse gut microbiome, the community of bacteria in your digestive tract.

One new vegetable a week adds up to 52 a year. Start just outside your routine: bok choy, fennel, delicata squash, kohlrabi, rainbow chard or purple cauliflower.

On your next grocery trip, pick one vegetable you've never cooked. Ask the farmer or produce clerk how they like it, or simply roast it at 425°F with olive oil and salt.
