Veggies for snacking

Veggies make some of the most satisfying snacks: crunchy, colorful and full of fiber. Some of my favorites:

  • Carrots, celery, cucumber and radish
  • Peas and asparagus
  • Broccoli and beets

Eat them raw, boiled or cooked, whichever you enjoy most. Leftover roasted veggies are a great snack straight from the fridge.

Add a little protein so they hold you over:

  • Carrots, cucumbers and bell peppers with hummus
  • A hard-boiled egg with cherry tomatoes
  • Snap peas with a few olives

Try this: wash and cut a container of veggie sticks when you get home from the store, so they're ready when hunger hits.
